Spinach pie with curd cheese Zveny Gora and cheese Dobrodar

For stuffing:
curd cheese Zveny Gora Traditional 15%  230 g,
spinach  400 g,
green onion  30 g,
sour cream  150 g,
cheese Dobrodar  50 g,
eggs  2,
egg white  1.
For dough:
butter Zveny Gora 73%  100 g,
flour  1,5 cup,
cheese Dobrodar  100 g,
salt  ½ teaspoon,
mustard powder  ½ teaspoon,
ground red pepper  ½ teaspoon,
water  50 ml,
egg yolk (for the surface)  1.

Type of dish




Cut butter into small crumbs in a blender or a food processor and mix with flour. Add salt, pepper, mustard powder, 100 g of grated cheese Dobrodar, 34 soupspoons of cold water and knead the dough. Form the dough into a ball; wrap in cling film and leave in the fridge for 30 min. Meanwhile, prepare the stuffing. Cut the green onion and spinach, mix with the curd cheese, add 2 eggs, the egg white, 150 g of sour cream and 50 g of grated cheese Dobrodar. Take the dough out of the fridge; take 2/3 of it leaving the rest in the fridge. Roll out the dough making a corn of about 30 cm in diameter. Put it carefully into an open round baking dish. Spread the stuffing on the dough. Roll out the rest of the dough into a corn, cut it in strips and lay them out crisscrossed on top. Yolk the top of the quiche and bake in the oven for 45 min. at 200 0С. The ready pie may be served both hot and cool.
