Caramelized Brie Ile de France with sesame seeds

Brie Ile de France  250 g,
sugar  180 g,
water  50 ml,
lemon juice,
sesame seeds  60 g,

Put Brie into refrigerator for at least 1 night before cooking. Put sugar into a stewpan, sprinkle with lemon juice and cover with water. Stir, bring to the boil and cook over medium heat until golden caramel. Take the Brie Ile de France out of refrigerator and make 12 slices. Put sesame seeds in a flat plate. Once caramel is golden remove it from heat. Stab pieces of cheese with a fork and quickly dip into caramel. The pieces of cheese should be covered from all sides. Then season them with sesame seeds. Wait until caramel thickens and serve.
