Home-made bread with vegetables and cheese Dobrodar

For dough:
dry yeast  1 teaspoon,
warm water  200 ml,
flour  400 g,
olive oil  34 tablespoons,
salt  1 pinch.
For stuffing:
zucchini  2,
eggplants  2,
onion  1,
garlic  34 cloves,
fresh herbs  1 beam,
Italian herbs  1 teaspoon,
olive oil  2 tablespoons,
cheese Dobrodar  150 g,
salt and pepper to taste.

Type of dish




Dilute the yeast with warm water; add salt and let infuse for 15 min. Add flour, salt and oil. Knead the dough for 10 min. The dough should be soft and elastic, so while kneading you may add a little flour and water. Cover the dough in a bowl with food film and put in a warm place for 2 hours. Dice all the vegetables and stew in a stewpot for 1015 min. Let the vegetables cool off, dice Dobrodar. Roll out the dough making a corn. Lay out the vegetables and cheese stuffing in the middle of the corn, turn the sides of the dough inside and cover the stuffing leaving open the very middle of it. Bake the stuffed bread at 200 оС for 4050 min.

It is the most mature of all Zveny Gora cheeses. It ripens for 45 days covered with special wax. Under this wax cover «Dobrodar» breathes acquiring its fruity notes. It has an elastic and dense texture and a soft, discreet but expressive taste. It never gets lost among the tastes of other cheeses and having once tried it you will always be willing to return to it again and again. «Dobrodar» is the kind of cheese our masters can rightly be proud of and for many Ukrainians it is a trademark of Zveny Gora.
