Smart cake with cream stuffing and butter Zveny Gora

Separate egg whites and yolks. Whip egg whites until thick foam. Mash the yolks with sugar, vanilla and water until small crystals of sugar disappear. Melt butter and add it little by little to the yolk mixture. Add flour in 3 stages, stirring the mixture thoroughly each time. Heat milk to 40 °C. First add ½ of milk to the dough, stir well and add the rest. Finally add the egg whites and stir with a spoon. The dough should be liquid, almost like milk. That is why you’d better take an all-in-one baking to prevent the dough from flowing out of the pan. Grease the baking pan (rectangular 20×30 cm or round 28 cm in diameter) with butter and sprinkle with a bit of flour or cover with baking paper. Pour the dough into the pan. Bake the smart cake at 180 °C for about 40 min. until outside is ruddy, but soft inside.
